I'd like to build a budget gaming pc.

Why i7-920? That's pointless: i7-860 would be a better and cheaper choice.

Hardly cheaper. The processor itself is more, a good motherboard would be about the same and the memory is similar, or if you don't mind higher CAS it's cheaper by the same amount the processor is more. Similar in performance CPU wise but with less memory in dual channel it laggs behind. Not to mention that there's practically no upgrade potential for the 1156 platform.

Dual-channel versus triple-channel has very little performance difference. While 6GB is better than 4GB, 4GB is plenty for most applications. As for upgrade potential, the same exact thing could be said for socket 1366; Core i9 is coming, but the prices are still yet to be confirmed. To be honest, I wouldn't be surprised if a 6-core processor would be $500, much like Q6600 was at release. Eventually it'll get cheap, but for gaming even a dual-core is plenty. To be honest, I'd actually suggest a Core i5-750; the price is right. Hyperthreading can be turned off for gaming.

True, but it's still nice to have. The point is that 1366 actually has planned better chips coming out for it, 1156 already has it's top end out. If you're thinking about Core i5 then i'd also think about AM3, similar performance but the same upgrade potential as 1366, with a much lower price. What with Thuban announced and all...
