Is there a program that you can use to edit the title, musician(s), genre, etc?

Right click > Properties > Details tab
You can edit the tags for mp3 files there.

iTunes also has a built in thing (right click get info).
Media Monkey uses information from Amazon to fill in everything for you, click, although I did that and it renamed everything completely wrong (see: Art Garfunkel). Do it at your own risk.

You can edit the information in Itunes but I'm pretty sure it won't change the actual file unless you have it in your Itunes music folder so make sure

Nope it changes the actual file. All of mine are in My Music (then by artist name) and have all been changed through iTunes.
